Spiced Spider Cupcakes
These festive cupcakes feature a homemade spice cake base, flavoured with cinnamon, cloves and nutmeg, and are topped with a creamy vanilla and cinnamon cream cheese frosting. The decoration involves creating a black gel web on each cupcake and finishing with a handmade gumdrop spider, complete with licorice legs and gel features. Perfect for a Halloween party, this recipe makes 24 cupcakes and takes about 3 hours and 25 minutes to complete.
Ingredients
- 3 cups all-purpose flour
- 2 cups white sugar
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 0.5 teaspoon ground cloves
- 0.5 teaspoon ground nutmeg
- 2 cups water
- 0.66666668653488 cup canola oil
- 2 tablespoons distilled white vinegar
- 2 teaspoons vanilla extract
- 2 (3 ounce) packages cream cheese, softened
- 0.5 cup butter, softened
- 2 teaspoons vanilla extract
- 0.25 teaspoon salt
- 0.125 teaspoon ground cinnamon
- 5 cups sifted confectioners' sugar, or more as needed
- 1 (.68 oz. tube) black decorating gel
- 24 large spiced gumdrops
- black shoestring licorice
Method
- Heat your oven to 350 degrees F (175 degrees C). Prepare cupcake pans with paper liners.
- In a bowl, whisk together the flour, white sugar, baking soda, 1 teaspoon salt, 1 teaspoon cinnamon, cloves and nutmeg. In another bowl, combine the water, canola oil, vinegar and 2 teaspoons vanilla extract. Pour the liquid ingredients into the dry mixture and stir until you have a smooth, thin batter.
- Pour the batter into a measuring jug or pitcher, then fill the prepared cupcake pans.
- Bake in the heated oven for about 25 minutes, until the tops spring back when touched and a toothpick inserted into the centre comes out clean. Cool the cupcakes fully on a wire rack.
- Using an electric mixer, beat the cream cheese, butter, 2 teaspoons vanilla extract, 1/4 teaspoon salt and 1/8 teaspoon cinnamon until smooth. Slowly add the confectioners' sugar, mixing until the frosting is creamy and easy to spread. Frost the completely cooled cupcakes.
- For decoration, use the black gel to draw a small circle in the middle of each cupcake. Draw a bigger circle around it, continuing with larger circles until the final one is roughly 1/4 inch from the edge, creating about 5 rings. Use a toothpick to draw around 8 lines from the centre out to the edge, like wheel spokes, to form the webs.
- Cut the licorice strings into pieces approximately 1 1/4 inch long for the legs. Insert four licorice legs into each side of every gumdrop. Apply decorating gel to create eyes and a smiling mouth on each gumdrop. Position one gumdrop spider in the centre of each cupcake web.
