Spiced Spider Cupcakes

Ingredients

  • 3 cups all-purpose flour
  • 2 cups white sugar
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon ground nutmeg
  • 2 cups water
  • 0.66666668653488 cup canola oil
  • 2 tablespoons distilled white vinegar
  • 2 teaspoons vanilla extract
  • 2 (3 ounce) packages cream cheese, softened
  • 0.5 cup butter, softened
  • 2 teaspoons vanilla extract
  • 0.25 teaspoon salt
  • 0.125 teaspoon ground cinnamon
  • 5 cups sifted confectioners' sugar, or more as needed
  • 1 (.68 oz. tube) black decorating gel
  • 24 large spiced gumdrops
  • black shoestring licorice

Method

  1. Heat your oven to 350 degrees F (175 degrees C). Prepare cupcake pans with paper liners.
  2. In a bowl, whisk together the flour, white sugar, baking soda, 1 teaspoon salt, 1 teaspoon cinnamon, cloves and nutmeg. In another bowl, combine the water, canola oil, vinegar and 2 teaspoons vanilla extract. Pour the liquid ingredients into the dry mixture and stir until you have a smooth, thin batter.
  3. Pour the batter into a measuring jug or pitcher, then fill the prepared cupcake pans.
  4. Bake in the heated oven for about 25 minutes, until the tops spring back when touched and a toothpick inserted into the centre comes out clean. Cool the cupcakes fully on a wire rack.
  5. Using an electric mixer, beat the cream cheese, butter, 2 teaspoons vanilla extract, 1/4 teaspoon salt and 1/8 teaspoon cinnamon until smooth. Slowly add the confectioners' sugar, mixing until the frosting is creamy and easy to spread. Frost the completely cooled cupcakes.
  6. For decoration, use the black gel to draw a small circle in the middle of each cupcake. Draw a bigger circle around it, continuing with larger circles until the final one is roughly 1/4 inch from the edge, creating about 5 rings. Use a toothpick to draw around 8 lines from the centre out to the edge, like wheel spokes, to form the webs.
  7. Cut the licorice strings into pieces approximately 1 1/4 inch long for the legs. Insert four licorice legs into each side of every gumdrop. Apply decorating gel to create eyes and a smiling mouth on each gumdrop. Position one gumdrop spider in the centre of each cupcake web.
