Spiced Spaghetti Squash With Red Cabbage

Ingredients

  • 1/2 medium spaghetti squash
  • 1 dash garlic salt
  • ground black pepper (to taste)
  • 1/2 cup red cabbage, chopped
  • 1 pinch cilantro
  • 1 pinch nutmeg
  • 1/2 teaspoon peppercorn
  • 1 bay leaf
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon brown sugar
  • 2 tablespoons apple juice
  • 1 pinch coriander
  • 1 teaspoon ginger

Method

  1. Place the squash in a pot of boiling water and cook for 5-10 minutes until tender.
  2. Remove the cooked squash and use a spoon to scoop out the noodle-like strands, discarding the outer skin.
  3. Add garlic salt and ground black pepper to the squash strands and toss to season.
  4. Place the chopped red cabbage and all the remaining ingredients into a hot skillet, stirring to combine them thoroughly.
