Spiced Spaghetti Squash With Red Cabbage
This colourful vegetable dish pairs tender spaghetti squash with a warm, spiced red cabbage mixture. The squash is boiled until soft, then seasoned and topped with a quick skillet blend of cabbage, herbs, and a tangy vinegar and apple juice dressing. It's a simple, flavourful recipe that comes together in about 20 minutes, perfect as a savoury side or a light main.
Ingredients
- 1/2 medium spaghetti squash
- 1 dash garlic salt
- ground black pepper (to taste)
- 1/2 cup red cabbage, chopped
- 1 pinch cilantro
- 1 pinch nutmeg
- 1/2 teaspoon peppercorn
- 1 bay leaf
- 2 tablespoons red wine vinegar
- 1/2 teaspoon brown sugar
- 2 tablespoons apple juice
- 1 pinch coriander
- 1 teaspoon ginger
Method
- Place the squash in a pot of boiling water and cook for 5-10 minutes until tender.
- Remove the cooked squash and use a spoon to scoop out the noodle-like strands, discarding the outer skin.
- Add garlic salt and ground black pepper to the squash strands and toss to season.
- Place the chopped red cabbage and all the remaining ingredients into a hot skillet, stirring to combine them thoroughly.
- Allow the mixture in the skillet to simmer gently for 5 minutes.
- Spoon the warm cabbage mixture over the prepared spaghetti squash.
- Serve immediately.
