Spiced Prawns with Coriander Mayo
These elegant spiced prawns make a perfect starter or party canapé. Large prawns are coated in a seasoned crust of breadcrumbs, chilli, cumin, and lime zest, then fried until crisp. They are served with a fresh, herby mayonnaise flavoured with coriander and lime juice. This Asian-inspired dish is designed to impress guests and can be prepared ahead of time, serving six people.
Ingredients
- 125g white breadcrumbs
- 1/2 tsp chilli powder
- 3 tsp cumin seed lightly crushed
- sprinkling crushed chillies (optional)
- zest and juice 1 lime plus wedges to serve
- about 20 large prawns shells off but tails still on
- 2 tbsp seasoned flour
- 1 egg beaten
- vegetable or groundnut oil for frying
- bunch coriander roughly chopped
- 6 tbsp mayonnaise
Method
- Combine the breadcrumbs, chilli powder, cumin, optional crushed chillies, and lime zest with ½ tsp salt and plenty of black pepper on a plate. Coat the prawns first in the seasoned flour, then dip them into the beaten egg, and finally roll them in the crumb mixture. Remove any excess crumbs. You can arrange them in a single layer and refrigerate for up to one day before cooking.
- To cook, pour oil into a large, deep frying pan to a depth of a few centimetres and heat it. Test the oil is ready by dropping in a few breadcrumbs. they should sizzle and brown. Cook the prawns in batches for 2 mins, turning them once, until the coating is golden and crisp all over. Transfer them to kitchen paper to drain. They can be kept warm in a low oven for 15 mins if needed. Serve on a warm plate with lime wedges. Stir the lime juice and chopped coriander into the mayonnaise and serve it on the side.
