Spiced Corn
This vibrant African side dish offers a delicious twist on plain corn. Fresh corn kernels are boiled until tender, then sautéed in butter with a fragrant blend of garam masala, chaat masala and chilli powder. A generous splash of lemon juice adds a tangy finish, creating a savoury and spiced accompaniment perfect for dinner. It serves four people and can be prepared in just 25 minutes.
Ingredients
- 2 cups fresh corn kernels
- salt as needed
- 4 teaspoons butter
- 2 tablespoons lemon juice, or more to taste
- 0.5 teaspoon garam masala
- 0.5 teaspoon chaat masala
- 0.25 teaspoon chili powder
Method
- Bring water to a boil in a deep saucepan. Cook the corn kernels with salt for 5 to 7 minutes, or until tender, then drain them.
- Melt 4 teaspoons of butter in a skillet. Stir in the cooked corn, 2 tablespoons of lemon juice, 0.5 teaspoon garam masala, 0.5 teaspoon chaat masala, 0.25 teaspoon chilli powder and salt. Cook for about 5 minutes until the corn turns light brown.
