Speedy Prawn Pilaf
This Indian prawn pilaf is a speedy and low fat meal that makes excellent use of your microwave. Combining basmati rice, frozen peas and prawns with mild curry powder, it cooks in just 3 minutes. It's an almost-instant dish ideal for a light lunch, snack or simple supper, finished with a cooling spoonful of natural yogurt.
Ingredients
- 1/2 x Rizazz pure basmati rice
- 2 tbsp frozen pea
- handful peeled, frozen prawns
- 2 tsp mild curry powder
- a spoonful natural yogurt
Method
- Combine half a pouch of the basmati rice with the frozen peas, frozen prawns, 2 tbsp water and the curry powder in a microwave-safe dish.
- Add seasoning if desired, then cover the dish and microwave on High for 3 mins until everything is piping hot.
- Serve the cooked pilaf immediately, topped with a spoonful of natural yogurt.
