Sparkling Mint and Lemon Juleps

Ingredients

  • 85g golden caster sugar
  • 4 tbsp fresh lemon juice
  • 1 bottle of chilled, sparkling wine (Cava is a good choice)
  • 20g/1oz pack fresh mint

Method

  1. Gently heat the sugar and lemon juice in a small pan until the sugar dissolves. Let it simmer for 2 minutes to create a syrup. Take it off the heat and allow it to cool completely. You can prepare this syrup ahead and store it in the fridge for up to a week.
  2. For serving, divide the cooled lemon syrup between six champagne flutes or tall glasses. Fill each glass with the chilled sparkling wine. Give each one a quick stir to combine, then finish by tucking a fresh mint sprig into the top of each drink.
