Sparkling Mint and Lemon Juleps
This American cocktail is a delightful start to any evening. It combines a simple homemade lemon syrup with chilled sparkling wine and fresh mint. The syrup can be prepared ahead of time, making assembly quick and easy. Ideal for serving at a buffet, lunch, or dinner, it yields six elegant drinks. The total preparation time is just 15 minutes.
Ingredients
- 85g golden caster sugar
- 4 tbsp fresh lemon juice
- 1 bottle of chilled, sparkling wine (Cava is a good choice)
- 20g/1oz pack fresh mint
Method
- Gently heat the sugar and lemon juice in a small pan until the sugar dissolves. Let it simmer for 2 minutes to create a syrup. Take it off the heat and allow it to cool completely. You can prepare this syrup ahead and store it in the fridge for up to a week.
- For serving, divide the cooled lemon syrup between six champagne flutes or tall glasses. Fill each glass with the chilled sparkling wine. Give each one a quick stir to combine, then finish by tucking a fresh mint sprig into the top of each drink.
