Spanish-Style Oxtail Stew

Ingredients

  • 3 tablespoons olive oil
  • 4 pounds beef oxtail, cut into pieces
  • 2 onions, chopped
  • 2 green bell pepper, chopped
  • 1 tablespoon minced garlic
  • 4 cups dry white wine
  • 1 cup beef broth
  • 3 bay leaves
  • 1 (1 ounce) square unsweetened chocolate
  • 2 tablespoons paprika
  • 0.5 teaspoon salt
  • 2 carrots, thickly sliced

Method

  1. Warm the olive oil in a Dutch oven until it begins to smoke. Brown the oxtail pieces in batches, then remove them and set aside.
  2. Place the chopped onions, green bell pepper, and minced garlic into the pot. Cook while stirring for about 5 minutes, until the onions are soft and translucent.
  3. Pour in the dry white wine and let it come to a simmer for 5 minutes. Add the browned oxtails, beef broth, bay leaves, and chocolate square. Return to a simmer, then lower the heat, cover the pot, and let it cook for 3 hours.
  4. Mix in the paprika and 0.5 teaspoon salt, then add the thickly sliced carrots. Cover the pot again and continue simmering until the carrots are tender.
