Spanish Potatoes

These flavourful Spanish potatoes make a wonderful side dish for dinner. Chunks of potato are coated in a smoky paprika and tomato purée mixture, then roasted with whole garlic cloves until crisp and fluffy. A final sprinkle of lemon juice and fresh parsley adds a bright finish. This recipe serves four and is ready in about 45 minutes.

Spanish Potatoes

Ingredients

  • 2 tbsp oil
  • 3 tbsp tomato purée
  • 1 tsp smoked paprika
  • 800g potato cut into small chunks
  • 4 garlic cloves
  • juice 1/2 lemon
  • handful flat-leaf parsley leaves, roughly chopped

Method

  1. Set your oven to 180C/fan 160C/gas 4. Combine the oil, tomato purée and paprika in a bowl, then toss the potato chunks in the mixture until fully coated. Lightly crush the garlic cloves with a knife, keeping the skins on, and place them on a baking tray with the coated potatoes.
  2. Season generously with salt and pepper. Roast for 40 mins, turning the potatoes once during cooking, until they are golden and crisp outside and tender inside. About five mins before the cooking time is complete, drizzle the lemon juice over the potatoes and return the tray to the oven. To serve, scatter the roughly chopped parsley leaves over the top.
