This comforting German casserole brings together classic Oktoberfest elements in one dish. Homemade spaetzle form the base, topped with a rich sauerkraut mixture flavoured with crispy bacon, sautéed onion, chopped apple and brown sugar. Kielbasa sausage pieces are layered on before the whole dish is baked until hot and bubbling. It's a satisfying meal that serves six from a single 9-inch square baking dish.

Spaetzle, Sauerkraut, and Sausage Casserole

Ingredients

  • 1 teaspoon vegetable oil
  • 1.3333333730698 cups all-purpose flour
  • 1 teaspoon salt
  • 3 eggs
  • 0.33333334326744 cup water
  • 2 slices bacon, diced
  • 0.5 large onion, chopped
  • 2 tablespoons butter
  • 1 small Gala apple, cored and chopped
  • 2 tablespoons brown sugar
  • 1 (16 ounce) package sauerkraut
  • 1 (16 ounce) package kielbasa sausage, cut into 2-inch pieces

Method

  1. Set your oven to 350 degrees F (175 degrees C). Use 1 teaspoon of oil to grease a metal colander.
  2. Combine the flour and salt in a bowl with a whisk. In another bowl, beat the eggs with the water, then stir this mixture into the dry ingredients to form a dough.
  3. Boil a large pot of water. Place the spaetzle dough into the prepared colander and set it over the pot. Use a flexible spatula to push the dough through the holes into the boiling water. Stir the spaetzle while they cook until they rise to the surface, about 5 minutes. Remove them with a slotted spoon to an ungreased 9x9-inch baking dish.
  4. In a large skillet, cook the diced bacon, stirring frequently, until crisp, about 8 minutes. Move the bacon to a paper towel, keeping the drippings in the pan. Cook the chopped onion in the drippings until browned, about 10 minutes, then transfer it to a bowl.
  5. Melt 2 tablespoons of butter in the same skillet. Stir in the chopped apple and brown sugar. Cook while stirring until the apple softens, about 5 minutes. Mix in the cooked bacon, onion and the package of sauerkraut. Cook, stirring often, for about 5 minutes to blend the flavours. Spoon this sauerkraut mixture over the spaetzle in the baking dish.
  6. Put the kielbasa pieces into a microwave-safe dish. Microwave on full power until the sausage is hot and no longer pink, 2 to 3 minutes. Add the sausage to the baking dish.
  7. Bake the assembled casserole in your preheated oven until it is bubbling, about 15 minutes.
