Soy Tuna with Wasabi Mash

This elegant Japanese-inspired main course is perfect for a special dinner. Tuna steaks are marinated in a sweet soy glaze, then quickly seared until pink in the centre. They are served with creamy mashed potatoes flavoured with wasabi paste and spring onions, accompanied by simple broad or soya beans. The dish comes together in about 25 minutes, offering a restaurant-quality meal at home.

Soy Tuna with Wasabi Mash

Ingredients

  • 3 tbsp soy sauce
  • 1 tbsp rice wine vinegar
  • 1 tbsp caster sugar
  • 2 tuna steaks each about 140g/5oz
  • 500g potato
  • 100ml semi-skimmed milk
  • 2 tsp wasabi paste (see Know-how)
  • 1 spring onion finely sliced
  • frozen broad bean or soya beans, to serve

Method

  1. Combine the soy sauce, vinegar and sugar in a bowl. Pour this mixture over the tuna steaks and allow them to marinate for at least 20 minutes or for up to 2 hrs in the refrigerator. Meanwhile, place the potatoes in a pan of lightly salted boiling water and cook them for 10-15 mins until tender. Drain the potatoes thoroughly. Warm the milk in the same pan and whisk in the wasabi paste. Return the drained potatoes to the pan and mash until you have a smooth consistency. Mix the sliced spring onion through the mash and keep it warm.
  2. Get a non-stick griddle pan very hot. Take the tuna steaks out of the marinade. Cook them on the griddle for 2-3 mins on each side so they are nicely seared on the outside but remain pink inside. Prepare the broad or soy beans by following the instructions on their packaging. Serve the cooked beans alongside the seared tuna and the warm wasabi mash.
