This traditional South African dessert is a type of custard pie known for its smooth, creamy filling. It is a straightforward recipe that yields a deeply satisfying treat, ideal for serving as a pudding or alongside a cup of coffee. The method involves creating a custard base, folding in beaten egg whites, and setting the mixture in pre-baked pastry cases before finishing with a dusting of cinnamon.
Ingredients
- 300 ml sweetened condensed milk (Eagle Brand Condensed Milk)
- 1800 ml milk (6 tins, use tin to measure)
- 4 large eggs, separated
- 2 tablespoons margarine
- 1/2 cup cornstarch
- 1/2 cup sugar
- 2 tablespoons custard powder (Birds Custard Powder)
- 2 teaspoons vanilla
- 1 tablespoon cinnamon
Method
- In a large microwave-safe casserole dish, combine the sweetened condensed milk, 300 ml of milk, the egg yolks, cornstarch, and custard powder. Whisk these ingredients thoroughly until well blended.
- Pour in the remaining 1500 ml of milk and whisk the mixture again until it is fully combined.
- Microwave the mixture on high power for 3 minutes. Remove it and stir well, then add the margarine and vanilla.
- Return the dish to the microwave and cook for another 3 minutes. Stir thoroughly once more.
- Continue heating in intervals of 2 or 3 minutes, stirring after each interval, until the mixture becomes thick and smooth. This process typically takes about 8 minutes in total.
- Let the cooked custard mixture cool for a short while.
- Take the reserved egg whites and beat them until they form stiff peaks.
- Gently fold the stiff egg whites into the slightly cooled milk custard until incorporated.
- Divide the filling evenly among three pre-baked pie crusts, such as a Pat in Pan crust.
- Finish each tart by sprinkling cinnamon generously over the top.
