South African Instant Milk Tart
This traditional South African milk tart features a buttery graham cracker base filled with a smooth, gently spiced custard. The filling is infused with a cinnamon stick and vanilla, then topped with a dusting of cinnamon sugar for a classic finish. It's a wonderfully simple dessert that comes together in about 25 minutes, serving six people.
Ingredients
- 1 (4.8 ounce) package graham crackers, crushed, or as needed
- 0.5 cup melted butter
- 2 eggs, beaten
- 0.25 cup white sugar, or to taste
- 3 tablespoons cornstarch
- 3 tablespoons cake flour
- 2 cups milk
- 1 cinnamon stick
- 2 tablespoons butter
- 0.5 teaspoon vanilla extract
- 1 tablespoon cinnamon sugar, or to taste
Method
- In a bowl, mix the crushed graham crackers with 1/2 cup of melted butter until the crumbs are fully coated. Press this mixture firmly into the base and up the sides of a pie dish.
- Take another bowl and beat the eggs with 1/4 cup of white sugar. Then, incorporate the cornstarch and cake flour into this mixture.
- Warm 2 cups of milk with a cinnamon stick in a saucepan for 5 to 10 minutes, until it is nearly boiling. Constantly whisk this hot milk into the egg mixture, then return the combined liquid to the saucepan.
- Cook the mixture in the saucepan, whisking continuously, for 5 to 10 minutes until it thickens. Remove from the heat and stir in 2 tablespoons of butter and 1/2 teaspoon of vanilla extract until smooth.
- Transfer the warm filling into the prepared crust. Finish by sprinkling 1 tablespoon of cinnamon sugar over the top.
