Ingredients

  • 1 (4.8 ounce) package graham crackers, crushed, or as needed
  • 0.5 cup melted butter
  • 2 eggs, beaten
  • 0.25 cup white sugar, or to taste
  • 3 tablespoons cornstarch
  • 3 tablespoons cake flour
  • 2 cups milk
  • 1 cinnamon stick
  • 2 tablespoons butter
  • 0.5 teaspoon vanilla extract
  • 1 tablespoon cinnamon sugar, or to taste

Method

  1. In a bowl, mix the crushed graham crackers with 1/2 cup of melted butter until the crumbs are fully coated. Press this mixture firmly into the base and up the sides of a pie dish.
  2. Take another bowl and beat the eggs with 1/4 cup of white sugar. Then, incorporate the cornstarch and cake flour into this mixture.
  3. Warm 2 cups of milk with a cinnamon stick in a saucepan for 5 to 10 minutes, until it is nearly boiling. Constantly whisk this hot milk into the egg mixture, then return the combined liquid to the saucepan.
  4. Cook the mixture in the saucepan, whisking continuously, for 5 to 10 minutes until it thickens. Remove from the heat and stir in 2 tablespoons of butter and 1/2 teaspoon of vanilla extract until smooth.
  5. Transfer the warm filling into the prepared crust. Finish by sprinkling 1 tablespoon of cinnamon sugar over the top.
