South African Chutney Chicken
This South African inspired dish features chicken thighs roasted with a sticky, flavourful glaze. The sauce combines mango chutney, garlic, chilli and Worcestershire sauce for a sweet and savoury coating. After a quick prep, the chicken roasts in the oven until perfectly cooked and caramelised. It's a simple yet impressive main course, ideal for a weeknight dinner and best served alongside a fresh green salad.
Ingredients
- 1 tbsp olive oil
- 1 small onion finely chopped
- 1 garlic clove finely chopped
- 1 red chilli deseeded and finely chopped
- 6 tbsp mango chutney
- 1 tbsp Worcestershire sauce
- 6 tbsp mayonnaise
- 8 chicken thighs skin on and bone in
- green salad to serve
Method
- Set your oven to 200C/180C fan/gas 6. Warm the oil in a frying pan and cook the chopped onion, garlic and chilli for a few mins until they soften. Mix in the mango chutney, Worcestershire sauce and mayonnaise. Check the seasoning.
- Place the chicken thighs on a baking tray lined with foil. Spoon the prepared chutney mixture over the chicken. Cook in the oven for 40-45 mins until the chicken is fully cooked and the glaze is sticky. Accompany with a green salad.
