This German-style bundt cake uses soured cream to create a wonderfully light and moist texture, baked in a decorative ring tin. It is finished with a simple, simmered butter glaze that adds a sweet, creamy crunch. Soured Cream Bundt Cake with Butter Glaze

Ingredients

  • 125g unsalted butter softened
  • 180g caster sugar
  • 2 large eggs beaten
  • 180g plain flour sifted
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • pinch salt
  • 150g soured cream
  • 100g caster sugar
  • 50g unsalted butter
  • 4 tbsp water
  • few drops vanilla extract

Method

  1. Lightly flour and grease a 1.4 litre (6 cup) fluted bundt tin. Set your oven to heat to 180C/160C fan/gas 4.
  2. In a bowl, beat the softened butter and caster sugar with an electric mixer until pale and fluffy. Gradually incorporate the beaten eggs, mixing thoroughly after each addition. Stir in the vanilla extract, adding a spoonful of flour if the mixture appears to separate.
  3. Combine the sifted plain flour, baking powder and a pinch of salt. Fold half of this dry mixture into the butter mixture along with half of the soured cream, beating until well combined.
  4. Mix in the remaining flour and soured cream. Transfer the batter to the prepared tin, smoothing the top level.
  5. Place in the oven and bake for 35–40 mins. Once baked, let the cake cool in its tin for 5 mins.
  6. For the glaze, combine all the listed ingredients in a small saucepan. Heat until the butter melts, then bring to a boil. Lower the heat slightly and let it simmer for 3 mins. Take off the heat and allow the glaze to cool and thicken.
  7. Invert the cake onto a wire rack placed over a tray. Apply half of the glaze by pouring or brushing it over the warm cake. Let it soak in, then cover with the remaining glaze. Allow the cake to cool completely before slicing.
