Soupy Burgers

Ingredients

  • 1 1/2 lbs hamburger, divide in 5 patties
  • 2 (10 ounce) cans condensed vegetable beef soup
  • 1 (14 ounce) can tomatoes, Diced
  • 1/2 cup small onion, diced
  • 3 cups mashed potatoes

Method

  1. Brown the hamburger patties in a frying pan, then transfer them to a plate. Drain most of the fat, leaving a little behind to cook the diced onion.
  2. Add the diced tomatoes along with their juice to the pan.
  3. Pour in the condensed vegetable beef soup and bring the mixture to a low boil. Remember not to add any water.
  4. Place the browned burgers back into the pan with the soup mixture. Cover and let it simmer for 30 to 60 minutes, stirring every few minutes to prevent sticking.
  5. Serve each burger on a plate next to a helping of mashed potatoes. Spoon the hot sauce from the pan over both the burger and the potatoes.
