Soupy Burgers
This is a classic family comfort dish, passed down through generations. Tender beef patties are browned, then simmered for 30 to 60 minutes in a savoury sauce made from condensed vegetable beef soup and diced tomatoes with sautéed onion. The finished burgers are served alongside a generous portion of mashed potatoes, all generously covered with the flavourful cooking sauce for a hearty and satisfying meal.
Ingredients
- 1 1/2 lbs hamburger, divide in 5 patties
- 2 (10 ounce) cans condensed vegetable beef soup
- 1 (14 ounce) can tomatoes, Diced
- 1/2 cup small onion, diced
- 3 cups mashed potatoes
Method
- Brown the hamburger patties in a frying pan, then transfer them to a plate. Drain most of the fat, leaving a little behind to cook the diced onion.
- Add the diced tomatoes along with their juice to the pan.
- Pour in the condensed vegetable beef soup and bring the mixture to a low boil. Remember not to add any water.
- Place the browned burgers back into the pan with the soup mixture. Cover and let it simmer for 30 to 60 minutes, stirring every few minutes to prevent sticking.
- Serve each burger on a plate next to a helping of mashed potatoes. Spoon the hot sauce from the pan over both the burger and the potatoes.
