This hearty Somali pasta sauce combines lean ground beef with diced vegetables in a rich tomato base. It is seasoned with a distinctive blend of toasted cumin, turmeric, paprika and fresh cilantro. The sauce simmers to develop deep flavours before being served over angel hair pasta. It makes a satisfying and aromatic family meal.

Somali Spaghetti Sauce

Ingredients

  • 2 tablespoons chopped fresh cilantro
  • 4 cloves garlic
  • 1 teaspoon cumin seeds
  • 1 teaspoon Himalayan pink salt
  • 1 teaspoon ground turmeric
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt-free seasoning blend (such as Mrs. Dash®)
  • 0.5 teaspoon ground black pepper
  • 0.25 cup olive oil
  • 1 pound lean ground beef
  • 1 onion, diced
  • 2 carrots, diced
  • 1 large potato, peeled and cubed
  • 2 (14 ounce) cans diced tomatoes
  • 2 tablespoons water, or to taste
  • 1 (16 ounce) package angel hair pasta

Method

  1. Pulse the fresh cilantro and garlic cloves in a food processor until they are finely chopped.
  2. Toast the cumin seeds in a small pot for 2 to 3 minutes until aromatic. Allow them to cool for 5 minutes, then grind into a fine powder.
  3. Move the ground cumin to a small bowl. Mix in the Himalayan pink salt, ground turmeric, paprika, Italian seasoning, salt-free seasoning blend and ground black pepper. Set this spice blend aside.
  4. Warm the olive oil in a large pot. Cook the lean ground beef, stirring, for about 5 minutes until browned. Stir in half of the prepared spice mixture. Add the diced onion and cook for about 5 minutes until soft. Mix in the diced carrots and cubed potato, cover the pot and cook for about 5 minutes, stirring sometimes, until the vegetables begin to soften.
  5. Add the canned diced tomatoes to the pot and bring the sauce to a boil. Lower the heat and stir in the cilantro-garlic mixture and the rest of the spice blend. Let it simmer for 30 to 40 minutes, stirring occasionally. Add 2 tablespoons of water if the sauce becomes too thick.
  6. Boil a large pot of lightly salted water. Cook the angel hair pasta for 4 to 5 minutes until al dente, then drain it. Serve the prepared sauce over the cooked pasta.
