Snowball Truffles
These festive French truffles are a delightful dessert or treat, ideal for involving children during school holidays. They also make charming edible gifts. The recipe requires just three ingredients: double cream, dark chocolate with a high cocoa content, and desiccated coconut. The process involves creating a smooth chocolate ganache, chilling it until firm, then shaping and coating the truffles. The preparation yields approximately 30 pieces and takes around 35 minutes of active time, plus chilling.
Ingredients
- 200ml double cream
- 200g good-quality dark chocolate (at least 70% cocoa solids)
- 200g desiccated coconut
Method
- Heat the cream in a saucepan until it just begins to boil. Meanwhile, chop the chocolate finely and place it in a large bowl. Pour the hot cream over the chocolate and mix thoroughly until you have a smooth, blended ganache. Allow it to cool, then refrigerate until the mixture is completely solid, which should take about 2 hrs.
- Use a teaspoon to scoop portions of the set mixture. Roll each scoop between your palms to form balls roughly the size of a walnut. Spread the desiccated coconut on a plate and roll each truffle in it to achieve an even, snowy coating. These can be stored somewhere cool for 3 days or frozen for up to 1 month.
