Smothered Chicken
This delicious smothered chicken recipe is a real crowd pleaser. Chicken breasts are flattened, seasoned and pan fried before being topped with mushrooms, a Mexican cheese blend, green onions and crumbled bacon. The dish is then covered to melt the cheese and finish cooking, resulting in a wonderfully rich and satisfying meal that comes together in only 10 minutes.
Ingredients
- 4 boneless skinless chicken breast halves
- garlic powder
- seasoning salt
- 1 tablespoon vegetable oil
- 1 (4 1/2 ounce) jar sliced mushrooms, drained
- 1 cup shredded Mexican blend cheese (4 oz.)
- 1/2 cup chopped green onion
- 1/2 cup bacon, crumbled
Method
- Flatten the chicken breast halves to a thickness of 1/4 inch.
- Season the chicken with garlic powder and seasoning salt.
- Heat the vegetable oil in a large non stick skillet and brown the chicken for 4 minutes, then turn it over.
- Arrange the drained mushrooms, chopped green onion, shredded cheese and crumbled bacon over the chicken.
- Place a lid on the skillet and cook for about 4 minutes, until the cheese has melted and the chicken juices run clear.
