This vibrant Mexican salsa combines the deep, smoky flavour of chargrilled red peppers with chipotle paste and fresh tomatoes. Blended with lime juice, garlic and olive oil, it's finished with chopped red onion and fresh coriander for a chunky, flavourful condiment. Ideal for serving as a snack or side dish with your favourite dippers. Makes enough for six servings.

Smoky Chipotle Pepper Salsa

Ingredients

  • 2 red peppers halved lengthways
  • 6 ripe tomatoes halved
  • 1 garlic clove crushed
  • juice 1 lime
  • 1 tbsp extra-virgin olive oil
  • 2 tsp chipotle paste
  • 1 red onion finely chopped
  • 20g pack coriander roughly chopped

Method

  1. Set your grill to high. Arrange the pepper halves on a baking sheet with their skins facing upwards. Grill them until the skins blacken, then transfer to a bowl and cover it. Allow them to cool before peeling off the skins.
  2. Remove and discard the seeds from the tomato halves. Place the tomatoes into a food processor along with the crushed garlic, lime juice, olive oil and chipotle paste. Add the peeled peppers and pulse the mixture until it is chunky. Finally, stir through the finely chopped red onion and roughly chopped coriander before serving.
