Smoked Trout and Cucumber Sesame Noodles
This fresh Japanese noodle salad makes a wonderful main course or snack. Soba noodles are simmered in a ginger-infused stock, then tossed with flaked smoked trout, sliced cucumber and a creamy dressing made from tahini and soy. Finished with spring onions and sesame seeds, it's a light yet satisfying meal that comes together in only 15 minutes.
Ingredients
- 1.2l vegetable stock
- knob fresh root ginger peeled and shredded
- 100g soba noodle
- 1 tbsp reduced-salt soy sauce plus extra to serve if you like
- 1 tbsp tahini paste or peanut butter
- 125g pack smoked trout fillets, flaked
- 1/2 large cucumber sliced
- 6 spring onions finely sliced
- sesame seed to serve
- sesame oil to serve
Method
- Place the stock and shredded ginger into a large pan and bring to the boil. Add the noodles and simmer for 4 mins until they are tender.
- Drain the noodles and rinse them under cold running water. Combine the soy and tahini with 2 tbsp water to create a dressing with the thickness of single cream. Coat the cooled noodles and fish with the dressing and add the cucumber. Top with the spring onions and sesame seeds, then finish with a drizzle of sesame oil if desired.
