Smoked Paprika Prawn Skewers
Inspired by Basque pintxos, these vibrant prawn skewers are a quick and healthy option. The prawns are marinated in a blend of smoked Spanish paprika, garlic, cumin and fresh lemon before being pan-fried. This recipe yields eight skewers, making it perfect for sharing as a snack or starter. The total preparation and cooking time is just 20 minutes.
Ingredients
- 12 large raw prawns
- 1/2 tbsp smoked Spanish paprika (sweet or hot, whichever you prefer)
- 2 large garlic cloves finely chopped
- 1 tsp cumin seeds toased and ground
- couple of oregano sprigs, leaves finely chopped, or 1⁄2 tsp dried
- juice and zest of 1 large lemon
- 2 tbsp olive oil
- 12 mini wooden skewers
Method
- Place the wooden skewers in a bowl of water to soak for 10 mins. While they soak, peel the prawns, keeping the tails on, and devein them. Make a small cut along the back with a sharp knife to remove the dark vein. Rinse the prawns and dry them thoroughly with kitchen paper.
- Combine the smoked paprika, chopped garlic, ground cumin, oregano, lemon zest and 1 tbsp of the olive oil in a medium bowl. Add the prepared prawns to the marinade and let them sit at room temperature for 15 mins. Afterwards, thread one prawn onto each soaked skewer.
- Warm the rest of the olive oil in a large frying pan. Cook the skewered prawns for 3-4 mins, turning them once halfway through, until they are just done. You might have to cook them in batches. Season to taste, add a squeeze of fresh lemon juice, and serve immediately.
