Smarty Pants Chicken, Sausage and Okra Gumbo with Rice

Ingredients

  • 1 box Zatarians gumbo base mix or 1 package Oak Grove smoke house gumbo base mix (absolutely DON'T USE gumbo mix with rice included)
  • 1 lb chicken (or as much as you can fit into the pot after you mix the base)
  • 1 lb smoked sausage (or as much as you can fit into the pot after you mix the base)
  • 1 (10 ounce) box sliced frozen okra, defrosted
  • 2 cups long grain white rice
  • 4 quarts water, in a large pot
  • 1/2 tablespoon salt

Method

  1. Prepare the gumbo base by following the instructions on the container, mixing it with water or chicken broth.
  2. Place the pot over heat and bring the base mixture to a low boil.
  3. Stir the base thoroughly as it heats to prevent it from sticking to the bottom of the pot and to ensure it dissolves completely.
  4. Add the chicken and smoked sausage to the pot, return it to a low boil, then reduce the heat and let it simmer for thirty minutes, stirring now and then and scraping the pot's base.
  5. Stir the defrosted okra into the gumbo, bring it back to a low boil for 2-3 minutes just to warm the okra through.
  6. For the rice, add salt to four quarts of water in a large pot and bring it to a rolling boil.
  7. Stir in the two cups of long grain white rice immediately.
  8. Begin timing for 13 minutes as soon as the rice is added to the boiling water.
  9. Stir the rice occasionally during cooking, making sure to scrape the bottom of the pot.
  10. After 13 minutes, give the rice a final stir, then drain it thoroughly using a colander.
  11. Rinse the drained rice briefly with hot water from the tap.
  12. Serve the prepared gumbo alongside the cooked white rice.
