Slow Cooker Spiced Apples with Barley
This comforting dish combines tender apples with barley in a spiced orange syrup, all prepared effortlessly in a slow cooker. It's a versatile recipe suitable for a wholesome breakfast or a lighter dessert. The apples are cored and halved before being nestled on barley and sprinkled with cinnamon, nutmeg, and orange zest. After cooking for 2 hours, it's served with a dollop of cool natural yogurt for a delightful contrast.
Ingredients
- 1/2 cup barley
- 2 eating apples
- 1/2 tsp cinnamon
- a grating of fresh nutmeg
- finely grated zest 1 large orange
- 4 tbsp natural yogurt
Method
- If needed, switch on your slow cooker to heat. Place the barley into the cooker and pour in 750ml of boiling water. Peel the apples and remove the cores, creating a hole in each about the size of a pound coin. Slice each apple into two halves.
- Position the apple halves with their skin sides facing down on top of the barley. Combine the cinnamon, freshly grated nutmeg, and orange zest, then scatter this mixture evenly over the apples.
- Set the slow cooker to Low and leave to cook for 2 hours. When ready, spoon into bowls and accompany with natural yogurt.
