Sizzling Salmon with Bean Mash
This smart British main course is perfect for a speedy yet impressive lunch or supper. Salmon fillets are glazed with a zesty lime, honey, and mustard mixture before being grilled. They are served atop a warm, rustic mash made from butter beans, crème fraîche, garlic, and wilted rocket. It's a flavourful and stylish dish that comes together in only 15 minutes, ideal for casual entertaining.
Ingredients
- 4 skinless salmon fillets about 175g/6oz
- 1 lime
- 3 tbsp clear honey
- 1 tbsp wholegrain mustard
- 3 x 410g cans butter beans rinsed
- 25g butter
- 5 tbsp crème fraîche
- 1 garlic clove crushed
- 100g bag rocket
Method
- Position the grill on its highest setting. Arrange the salmon fillets, flesh-side up, in a single layer within a shallow flameproof dish. Finely grate the lime zest into a separate bowl, then squeeze in the juice. Mix in the honey, mustard and a generous pinch of salt. Pour this glaze over the salmon and grill for 5-6 minutes, without turning, until the top is golden and the fish is cooked through. test the centre with a fork.
- While the salmon cooks, place the rinsed beans in a saucepan with the butter, crème fraîche, crushed garlic, and plenty of salt and pepper. Heat and coarsely mash the contents together using a wooden spoon or masher until hot and bubbling, which takes just a few minutes as the beans are pre-cooked. Add the entire bag of rocket and stir it into the hot mash until it has wilted.
- Plate the creamy bean mash and place the grilled salmon fillets on top. Finish by drizzling over the delicious cooking juices from the dish.
