Dark chocolate and cream are melted to sandwich chocolate biscuits, while a luxurious filling of mascarpone, double cream, Irish cream and icing sugar is whipped until thick. The cake is built in layers on a plate, with each tier becoming smaller, before being chilled to set. It serves 12 people and requires about 45 minutes of preparation time.

Ingredients

  • 200g bar dark chocolate broken into chunks
  • 700ml double cream
  • 5 boxes good milk chocolate biscuits 48 biscuits in total, or to make your own see tip, below
  • 400g mascarpone
  • 5 tbsp Irish cream
  • 5 tbsp icing sugar sifted

Method

  1. Combine the chocolate chunks with 150ml of the double cream in a small saucepan and melt them together. Allow this mixture to cool until it reaches a spreadable consistency, then use it to sandwich the chocolate biscuits together in pairs.
  2. Select a cake stand or flat plate for assembling the dessert. Place the rest of the cream, the mascarpone, Irish cream and sifted icing sugar into a large bowl. Use an electric hand whisk to beat everything until the mixture is thick and just holds its shape.
  3. Create a base layer on your plate using some of the biscuit sandwiches, arranging them to nearly cover the surface. Secure each one with a small dot of the cream mixture underneath. Spread or dollop a generous amount of the cream over this layer. Add another, slightly smaller, layer of biscuit sandwiches on top. For a neat appearance, decide on a front for your cake and always position the outer ring of biscuits from that point first, filling the centre with broken biscuit halves if needed. Continue this process, making each successive layer smaller, until you finish with one single biscuit and a final dollop of cream. Place the assembled cake in the fridge to chill overnight.
