Shrimp Mold
This is a classic American appetiser, a savoury mould perfect for entertaining. The recipe combines cooked shrimp with a creamy, tangy base of tomato soup, cream cheese and mayonnaise, set with gelatin. Celery and green onions add a fresh crunch. Once set in the refrigerator, it is unmoulded onto a plate for an elegant presentation. Serve it alongside crackers or slices of toasted French bread for a delightful starter. The preparation requires about 85 minutes in total, including chilling time.
Ingredients
- 1 (10.75 ounce) can condensed tomato soup
- 2 (.25 ounce) envelopes unflavored gelatin
- 0.5 cup cold water
- 6 ounces cream cheese, softened
- 1 cup mayonnaise
- 1 pound cooked shrimp
- 1 cup minced celery
- 0.5 cup green onions, minced
Method
- Warm the condensed tomato soup in a small saucepan or using a microwave.
- Stir the unflavored gelatin into the cold water in a medium bowl. Pour the hot tomato soup into this gelatin mixture and combine.
- Blend the softened cream cheese with the mayonnaise in a separate mixing bowl. Incorporate the soup and gelatin liquid into this creamy mixture until smooth. Fold in the cooked shrimp, minced celery and minced green onions.
- Transfer the combined mixture into a 1 quart mould. Place it in the refrigerator to set for a minimum of 1 hour, though leaving it overnight is ideal. To serve, turn the mould out onto a plate.
