Ingredients

  • 1 (10.75 ounce) can condensed tomato soup
  • 2 (.25 ounce) envelopes unflavored gelatin
  • 0.5 cup cold water
  • 6 ounces cream cheese, softened
  • 1 cup mayonnaise
  • 1 pound cooked shrimp
  • 1 cup minced celery
  • 0.5 cup green onions, minced

Method

  1. Warm the condensed tomato soup in a small saucepan or using a microwave.
  2. Stir the unflavored gelatin into the cold water in a medium bowl. Pour the hot tomato soup into this gelatin mixture and combine.
  3. Blend the softened cream cheese with the mayonnaise in a separate mixing bowl. Incorporate the soup and gelatin liquid into this creamy mixture until smooth. Fold in the cooked shrimp, minced celery and minced green onions.
  4. Transfer the combined mixture into a 1 quart mould. Place it in the refrigerator to set for a minimum of 1 hour, though leaving it overnight is ideal. To serve, turn the mould out onto a plate.
