Ingredients

  • 1 lb raw shrimp, peeled
  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup finely chopped green onion
  • 1/2 cup finely chopped celery
  • 3 tablespoons lemon juice
  • 2 tablespoons finely chopped Italian parsley
  • 1/2 teaspoon salt
  • 1/8 teaspoon cayenne pepper
  • 1/2 cup mayonnaise

Method

  1. Place a large pot of salted water on the heat and bring it to a boil before adding the shrimp.
  2. Allow the shrimp to boil for around 5 minutes or until cooked through, ensuring they are not overdone.
  3. Combine the softened cream cheese with the green onions, celery, 3 tablespoons of lemon juice, parsley, 1/2 teaspoon of salt, 1/8 teaspoon of cayenne pepper and the mayonnaise in a large bowl, blending them together.
  4. Carefully incorporate the cooked shrimp into the cream cheese mixture.
  5. Place a cover over the bowl and refrigerate the dip for at least 8 hours, or ideally leave it overnight.
