Shrimp Dip Delight
This creamy shrimp dip originates from the official cookbook of the 1984 Louisiana World Exposition. It features boiled shrimp folded into a blended mixture of cream cheese, finely chopped green onion and celery, lemon juice, parsley, salt, cayenne pepper and mayonnaise. For optimal flavour, the completed dip requires refrigeration for a minimum of 8 hours before serving. The total preparation time is approximately 65 minutes, not including the essential chilling period.
Ingredients
- 1 lb raw shrimp, peeled
- 1 (8 ounce) package cream cheese, softened
- 1/2 cup finely chopped green onion
- 1/2 cup finely chopped celery
- 3 tablespoons lemon juice
- 2 tablespoons finely chopped Italian parsley
- 1/2 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 1/2 cup mayonnaise
Method
- Place a large pot of salted water on the heat and bring it to a boil before adding the shrimp.
- Allow the shrimp to boil for around 5 minutes or until cooked through, ensuring they are not overdone.
- Combine the softened cream cheese with the green onions, celery, 3 tablespoons of lemon juice, parsley, 1/2 teaspoon of salt, 1/8 teaspoon of cayenne pepper and the mayonnaise in a large bowl, blending them together.
- Carefully incorporate the cooked shrimp into the cream cheese mixture.
- Place a cover over the bowl and refrigerate the dip for at least 8 hours, or ideally leave it overnight.
