Shrimp and Lemon Skewers With Feta Dill Sauce

Ingredients

  • 1/2 cup low-fat plain yogurt
  • 1 scallion, white and light green parts only thinly sliced
  • 4 garlic cloves, finely chopped
  • 2 1/2 tablespoons fresh dill, finely chopped
  • 1/2 cup feta cheese, crumbled (2 ounces)
  • salt & freshly ground black pepper (to taste)
  • 1/4 cup extra virgin olive oil
  • 2 lbs large shrimp, peeled and deveined, EXTRA LARGE, if available
  • 2 lemons, cut into 12 wedges

Method

  1. Prepare your barbecue or grill.
  2. Combine the yogurt, sliced scallion, 1/4 of the chopped garlic, and 1/2 tablespoon of dill in a medium bowl.
  3. Mix in the crumbled feta, pressing it gently into the yogurt.
  4. Add salt and black pepper to your preference.
  5. In a separate large bowl, whisk together the olive oil with the remaining garlic and 2 tablespoons of dill.
  6. Place the shrimp and lemon wedges into the bowl and season with salt and pepper.
  7. Toss everything together until evenly coated.
  8. For each skewer, thread 3-4 shrimp pieces alternately with 2 lemon wedges.
  9. Sprinkle the assembled skewers with a little more salt and pepper.
  10. Cook on the grill, turning now and then, for about 5 minutes until the shrimp are opaque and have grill marks.
  11. Arrange the hot skewers on a serving plate and offer the Feta-Dill Sauce alongside immediately.
