Shrimp and Lemon Skewers With Feta Dill Sauce
These Greek-inspired skewers feature large shrimp and fresh lemon wedges, grilled until charred and served with a tangy, herbaceous sauce. Ingredients
- 1/2 cup low-fat plain yogurt
- 1 scallion, white and light green parts only thinly sliced
- 4 garlic cloves, finely chopped
- 2 1/2 tablespoons fresh dill, finely chopped
- 1/2 cup feta cheese, crumbled (2 ounces)
- salt & freshly ground black pepper (to taste)
- 1/4 cup extra virgin olive oil
- 2 lbs large shrimp, peeled and deveined, EXTRA LARGE, if available
- 2 lemons, cut into 12 wedges
Method
- Prepare your barbecue or grill.
- Combine the yogurt, sliced scallion, 1/4 of the chopped garlic, and 1/2 tablespoon of dill in a medium bowl.
- Mix in the crumbled feta, pressing it gently into the yogurt.
- Add salt and black pepper to your preference.
- In a separate large bowl, whisk together the olive oil with the remaining garlic and 2 tablespoons of dill.
- Place the shrimp and lemon wedges into the bowl and season with salt and pepper.
- Toss everything together until evenly coated.
- For each skewer, thread 3-4 shrimp pieces alternately with 2 lemon wedges.
- Sprinkle the assembled skewers with a little more salt and pepper.
- Cook on the grill, turning now and then, for about 5 minutes until the shrimp are opaque and have grill marks.
- Arrange the hot skewers on a serving plate and offer the Feta-Dill Sauce alongside immediately.
