Shanghai Style Noodles With Spicy Meat Sauce
This dish delivers a wonderfully complex flavour from a savoury sauce of ground meat, hoisin, soy, and sherry, tossed with vermicelli noodles. Ingredients
- 3 tablespoons vegetable oil
- 2 teaspoons minced garlic
- 1 1/2 teaspoons minced fresh gingerroot
- 1 1/2 teaspoons dried red pepper flakes
- 1 1/2 cups chopped onions
- 1 lb ground beef or 1 lb ground pork
- 1 cup chicken broth
- 1/3 cup hoisin sauce
- 1/4 cup soy sauce
- 1/4 cup dry sherry
- 2 tablespoons cornstarch
- 1 (16 ounce) package vermicelli, cooked
- 2 tablespoons sesame oil
- 1/2 cup sliced green onion
Method
- Warm the vegetable oil in a large skillet or wok.
- Saute the minced garlic, ginger root, and dried red pepper flakes for about 5 seconds.
- Put in the chopped onions and stir fry for about 5 minutes until they turn translucent.
- Add the ground meat, using a spoon to break it apart.
- Continue cooking until the meat is no longer pink.
- Mix together 1/2 cup of the chicken broth with the hoisin sauce, soy sauce, and dry sherry.
- Pour this liquid mixture into the skillet with the meat.
- Place a lid on the skillet, lower the heat, and let it simmer for 10 minutes, giving it a stir once or twice.
- While that simmers, blend the cornstarch into the remaining 1/2 cup of chicken broth.
- Gradually add this cornstarch mixture to the meat sauce, stirring constantly until it thickens.
- In a large bowl, combine the warm cooked vermicelli with the sesame oil.
- Add the thickened meat sauce to the noodles and toss everything together gently.
- Finish by scattering the sliced green onions over the top.
