Shaker Lemon Pie

Ingredients

  • 2 cups white sugar
  • 2 lemons, thinly sliced
  • 4 eggs, beaten
  • 1 recipe pastry for a 9 inch double crust pie
  • 1 tablespoon milk

Method

  1. In a large bowl, mix the sliced lemons with the white sugar and allow this to stand for a minimum of 4 hours, or you can leave it overnight.
  2. Heat your oven to 450 degrees F (230 degrees C). Take one portion of the pie pastry and press it firmly into a 9-inch pie plate.
  3. Stir the beaten eggs into the lemon and sugar mixture until everything is fully incorporated. Transfer this filling into the prepared pie crust. Place the second piece of pastry over the top to cover it. Use a brush to apply milk over the top crust, then sprinkle with sugar if you like.
  4. Place the pie in the heated oven and bake for 15 minutes. Then lower the oven temperature to 375 degrees F (190 degrees C) and continue baking for another 20 to 25 minutes. It is ready when a knife inserted into the centre comes out clean.
