Seven Layer Side Dish
This satisfying layered bake is a fantastic way to use up ingredients. It features homestyle egg noodles, shredded potatoes, spinach, and a rich blend of cheeses, all baked together with a savoury mushroom and onion mixture. The result is a comforting side dish that is substantial enough to serve as a main course with the addition of cooked meat. It requires some assembly but yields a beautiful, sliceable presentation perfect for a gathering.
Ingredients
- 1 (12 ounce) package homestyle egg noodles
- 1 cup butter or 1 cup margarine, melted
- 1 lb fresh mushrooms, sliced
- 1 large onion, sliced
- 2 tablespoons garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 (20 ounce) package shredded potatoes
- 1/2 lb asiago 3-cheese blend or 1/2 lb Italian cheese blend, shredded
- 2 (10 ounce) packages frozen chopped spinach, thawed and drained well
- 1 cup green onion, chopped
- 1/2 cup parmesan cheese, grated.
Method
- Heat your oven to 350 degrees.
- Prepare the egg noodles following the package instructions, then drain them.
- Cook the butter, sliced mushrooms, onion, minced garlic, salt, and pepper for about 5 minutes until the onion softens.
- Take the mushroom mixture off the heat.
- Lightly grease a 9-inch springform pan.
- Begin assembling the dish in layers, pressing down firmly after each one.
- Start with half of the shredded potatoes.
- Add all of the cooked noodles as the next layer.
- Spread half of the shredded cheese blend over the noodles.
- Spoon the entire mushroom and onion mixture on top.
- Drizzle some melted butter over the layer.
- Distribute the well-drained spinach evenly.
- Cover with the remaining shredded potatoes.
- Bake the dish at 350 degrees for 30 minutes.
- Take the pan out of the oven.
- Sprinkle the rest of the cheese blend, the chopped green onions, and the grated Parmesan over the top.
- Return it to the oven and bake for another 30 minutes.
- For the final 2-3 minutes, place it under the broiler to brown the top.
- Allow the bake to cool for 30-40 minutes.
- Carefully remove the side of the springform pan and cut the dish into wedges.
