Seven-cup muesli
This Scandinavian muesli is a wholesome breakfast or snack that provides a great start to your day. It combines oats with a variety of nuts and seeds, along with dried fruits like raisins, cranberries and apricots. The recipe makes 10 servings and is ready in just 10 minutes. To serve, simply add your choice of milk and top with fresh seasonal fruit for a complete meal that contributes to your daily fruit and vegetable intake.
Ingredients
- 3 cups oats
- 1 cup mixed nuts including macadamia if possible
- 1/2 cup sesame seeds
- 1/2 cup sunflower seeds
- 1/2 cup raisins
- 1/2 cup dried cranberries
- 1 cup dried ready-to-eat apricots chopped
- soya or semi-skimmed milk
- chopped fresh seasonal fruit such as pears, banana, pineapple, papya, passion fruit and grapes
Method
- Place the 3 cups of oats into a large container with a tight-fitting lid. Add the 1 cup of mixed nuts, 1/2 cup sesame seeds, 1/2 cup sunflower seeds, 1/2 cup raisins and 1/2 cup dried cranberries. Mix in the 1 cup of chopped dried apricots.
- For each serving, transfer a portion of the muesli mix to a bowl. Add your preferred soya or semi-skimmed milk. Finish with a topping of chopped fresh seasonal fruit.
