Ingredients

  • 30 peeled garlic cloves, ends cut off
  • 2 cups kosher salt
  • 1 tablespoon onion powder
  • 2 tablespoons paprika
  • 3 tablespoons good-quality chili powder
  • 2 tablespoons white pepper
  • 2 tablespoons celery seeds
  • 1 tablespoon ground ginger
  • 1 tablespoon poultry seasoning
  • 1 tablespoon dry mustard
  • 1 tablespoon dried dill weed

Method

  1. With the food processor running and fitted with its metal blade, add the garlic cloves and process them until they are finely minced.
  2. Take a large measuring cup and mix together all of the other ingredients.
  3. Pour this dry mixture into the food processor with the garlic and pulse the machine until everything is fully combined.
  4. Use a spatula to scrape down the inside walls of the processor bowl, then pulse the mixture once more.
  5. Spoon the finished seasoning into an airtight container that has a shaker lid.
  6. Store the container in the refrigerator.
  7. The seasoning salt will remain good for 3 months when kept refrigerated.
