Seasonal 'wealth greens' ('Fa cai')
This vibrant dish, known as 'Fa cai' or 'wealth greens', is a traditional Lunar New Year favourite. Red chard is quickly stir-fried with aromatic garlic, ginger and chilli, then finished with Shaoxing wine and soy sauce. The red-tinged greens symbolise prosperity and good fortune, making it a festive and nutritious side that comes together in only 10 minutes, serving two people.
Ingredients
- 2 tsp cornflour
- 1 tbsp rapeseed oil
- 2 garlic cloves finely chopped
- 21/2 cm piece ginger finely shredded into matchsticks
- 1 red chilli deseeded and finely chopped
- 500g red chard sliced into 5cm pieces
- 1 tbsp Shaoxing rice wine
- 1 tbsp light soy sauce
- 1 tsp toasted sesame oil
Method
- 1. Combine the cornflour with 1 tbsp water in a small bowl and leave it to one side. Place a wok or frying pan over high heat until it is very hot, then add the oil and swirl it around. Season, then add the garlic, ginger and chilli and stir them in. Introduce the sliced chard and toss everything together. Pour in the rice wine and cook while stirring for less than 1 min. Add the soy sauce along with the cornflour slurry and stir through, then remove from the heat and finish by drizzling over the sesame oil. Serve straight away.
