Seared Scallops with Sweet Chilli Sauce
These sophisticated Asian canapés feature fresh scallops marinated in a fragrant paste of ginger, garlic, and coriander. After a quick sear in a hot pan, they are served with a sweet chilli dipping sauce. This impressive yet healthy starter is ready in just 20 minutes and yields 20 individual bites, ideal for a stylish gathering.
Ingredients
- knob of fresh root ginger
- handful coriander stems or leaves
- 2 garlic cloves
- 4 tbsp vegetable oil plus extra for cooking
- 20 scallops
- sweet chilli sauce to serve (recipe below)
Method
- Use a pestle and mortar to pound the ginger, coriander, and garlic into a paste. Stir in 4 tbsp of vegetable oil. Coat the 20 scallops thoroughly with this marinade, then thread each one onto a skewer. This step can be completed up to 1 day ahead.
- Get a non-stick frying pan very hot. Cook a few skewers at a time for 2 mins until they begin to colour. Flip them over, adding a little more oil if necessary, and cook for another min. Serve immediately with sweet chilli sauce for dipping.
