Savoury Parmesan Tartlets
These delightful tartlets are an ideal make-ahead starter for a special Sunday lunch or party. Crisp parmesan pastry cases are filled with two delicious options: one with hummus and roasted cherry tomatoes, the other with soft cheese, smoked salmon and dill. They are simple to assemble and can be prepared in advance for effortless entertaining. The recipe yields 28 individual canapes.
Ingredients
- 375g ready-rolled shortcrust pastry sheet
- flour for dusting
- 1 egg beaten with a good pinch of flaky salt
- 3 tbsp finely grated parmesan
- 7 cherry tomatoes halved
- 200g bought hummus
- few chives
- 200g soft cheese
- 85g smoked salmon
- dill sprigs
- tiny capers optional
Method
- Preheat the oven to 200C/180C fan/gas 6. On a surface dusted with flour, roll the pastry sheet into a 30 x 40cm oblong. Use a 6.5cm cutter to stamp out 24 rounds, then press them into fairy cake or muffin tins. Prick each base with a fork.
- Brush the pastry with the beaten egg, sprinkle with parmesan and bake for 10-12 mins. Gather the trimmings, re-roll and cut 4 more rounds. Glaze and bake these. Once baked, roast the halved cherry tomatoes on a tray for 8 mins. The cases store in a tin for 3 days or freeze for 3 months. Tomatoes keep refrigerated for 24 hrs.
- For serving, spoon a teaspoon of hummus into some cases, top with a tomato half and snipped chives. Fill the remaining cases with soft cheese, add a twirl of salmon, dill, black pepper and capers if using.
