Sauteed Leeks, Mushrooms and Onions

Ingredients

  • 1 cup onion, chopped
  • 1 1/2 cups mushrooms, cleaned and sliced
  • 2 cups leeks, cleaned,1/4 inch slice,white part and the start of the green only
  • 1 teaspoon dry oregano
  • salt and pepper
  • vegetable oil cooking spray

Method

  1. Coat a non-stick skillet with cooking spray.
  2. Cook the chopped onions until they become tender and begin to brown.
  3. Introduce the sliced mushrooms and continue to cook for approximately 3 minutes.
  4. Mix in the sliced leeks, along with salt, pepper and the dry oregano.
  5. Saute the mixture for a further 8 minutes, cooking longer if you prefer very soft vegetables.
