Sauteed Garlic Scapes with Red Pepper and Almonds
This simple vegetable dish features garlic scapes, which are briefly boiled until tender crisp before being sauteed with diced red pepper. The scapes are seasoned with salt and pepper and cooked in olive oil until softened. Toasted slivered almonds are stirred in at the end for a delightful crunch. It's a fast and flavourful side that serves four people.
Ingredients
- 3 cups garlic scapes, 1 inch pieces
- 1 tablespoon extra virgin olive oil
- 1/2 cup diced sweet red pepper
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/3 cup toasted slivered almonds
Method
- Cook the scapes in a pot of boiling salted water for about 2 minutes, until they are tender crisp.
- Drain the scapes, then rinse them under cold water. Drain them again thoroughly and pat dry.
- Warm the oil in a large nonstick skillet. Add the scapes, peppers, salt, and pepper, cooking for about 4 minutes while stirring occasionally until softened.
- Mix the toasted almonds into the skillet.
