Sauteed Garlic Scapes with Red Pepper and Almonds

Ingredients

  • 3 cups garlic scapes, 1 inch pieces
  • 1 tablespoon extra virgin olive oil
  • 1/2 cup diced sweet red pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/3 cup toasted slivered almonds

Method

  1. Cook the scapes in a pot of boiling salted water for about 2 minutes, until they are tender crisp.
  2. Drain the scapes, then rinse them under cold water. Drain them again thoroughly and pat dry.
  3. Warm the oil in a large nonstick skillet. Add the scapes, peppers, salt, and pepper, cooking for about 4 minutes while stirring occasionally until softened.
  4. Mix the toasted almonds into the skillet.
