Ingredients

  • 1 pound Italian sausage
  • 2 onions, chopped
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 6 cups chicken broth
  • 1 (28 ounce) can whole peeled tomatoes with juice
  • 1.5 cups shredded cabbage
  • 2 teaspoons dried basil
  • 2 cups bow tie pasta
  • 0.5 teaspoon garlic salt

Method

  1. In a soup pot, cook the sausage, stirring it until it is crumbled and has lost its pink colour.
  2. Put in the chopped onions, celery and carrots. Cook these, giving them an occasional stir, until the onions have softened, which should take about 5 minutes.
  3. Pour in the broth, add the tomatoes, cabbage and basil, then bring everything to a boil. Stir the pasta into the pot, cover it and let it simmer until the pasta is tender, about 10 minutes. Finish by seasoning with the garlic salt.
