Samoan Panikeke
These traditional Samoan pancakes, known as panikeke, are a delightful treat. Made with mashed ripe bananas and a simple batter, they are deep-fried to a perfect golden brown. The result is a batch of round, crispy fritters with a wonderfully sweet and tropical flavour. Ideal for a special breakfast, they come together in about 40 minutes and make roughly 24 pieces.
Ingredients
- 3.5 cups all-purpose flour
- 1.3333333730698 cups white sugar
- 2 teaspoons baking powder
- 1.5 cups water
- 2 medium very ripe bananas, mashed
- 1 tablespoon vanilla extract
- 1.5 cups vegetable oil for frying, or as needed
Method
- Combine the flour, sugar, and baking powder in a bowl, whisking them together until fully blended. Mix in the water, mashed bananas, and vanilla extract to form a smooth, sticky dough.
- Pour oil into a deep fryer to a depth of 3 inches and heat it to 350 degrees F (175 degrees C).
- For each batch, take a scant 1/4 cup of batter using a large spoon. Use a second spoon to carefully slide the batter into the hot oil, cooking four to five fritters at once. Fry them for about 3 minutes per side until they rise to the surface and become golden brown. Transfer the cooked panikeke to paper towels to drain.
