Salsa
This vibrant Mexican salsa is wonderfully adaptable. You can adjust the heat level to your preference while keeping its fantastic flavour. It is a simple combination of fresh tomatoes, onion, jalapeños, and aromatic cilantro and garlic, all brought together with lime juice and spices. The recipe yields about 1 1/2 cups, ideal for serving four people as a snack with tortilla chips. It is designed to be easily scaled up if you need a larger batch.
Ingredients
- 2 large tomatoes, seeded (don't have to) and diced
- 1/2 small sweet onion, finely chopped (like Texas sweet or red)
- 1 -3 jalapeno, finely chopped
- 2 tablespoons cilantro, chopped
- 1 clove garlic, finely chopped
- 2 tablespoons lime juice, fresh squeezed
- 1 teaspoon olive oil
- 3/4 teaspoon salt
- 1/2 teaspoon cumin
- 1/4 teaspoon black pepper
Method
- Mix all of the listed ingredients together in a bowl.
- Place the salsa in the refrigerator to chill for 2 hours before you serve it with chips.
