This Asian-inspired main course combines baked salmon with fried noodles for a satisfying dinner. The dish is infused with a savoury sauce made from soy, ginger, garlic and rice wine, finished with toasted sesame seeds and spring onions. It's a simple yet flavour-packed meal that comes together in just 30 minutes, ideal for a casual supper for two.

Salmon Noodles

Ingredients

  • 4 tbsp dark, light, low-salt (or a mixture) soy sauce
  • 4 tbsp rice wine or mirin
  • 1 stem ginger finely chopped, plus 2 tbsp syrup from the jar
  • 1 garlic clove crushed
  • 2 salmon fillets
  • 140g noodles
  • 2 tbsp sesame seeds
  • 2 spring onions chopped

Method

  1. Set your oven to 180C/160C fan/gas 4. Combine the soy sauce, rice wine or mirin, chopped stem ginger with its syrup, and crushed garlic in a small jug. Place the salmon fillets on baking parchment in a roasting tin and coat them with half of the prepared sauce. Bake for 15 mins until the salmon is fully cooked.
  2. While the salmon bakes, boil a large pan of water. Cook the 140g noodles according to the packet directions, then drain them thoroughly.
  3. Toast the sesame seeds in a small frying pan for 1 min. Mix most of the toasted seeds into the drained noodles, saving some for garnish. Combine the noodles with the rest of the sauce and any juices from the salmon tin. Serve the salmon alongside the noodles, topped with the chopped spring onions and the reserved sesame seeds.
