This traditional sage and onion stuffing completes any roast dinner. The mixture is gently fried with aromatics before being combined with breadcrumbs and egg, then baked until beautifully golden. You can shape it into individual balls or simply pack it into a baking dish for an easier preparation. It serves four people and takes just under an hour to make from start to finish.

Sage & Onion Stuffing

Ingredients

  • 1 tbsp butter
  • 1 tbsp oil
  • 1 large onion finely chopped
  • 1 bay leaf
  • 1 garlic clove crushed
  • 11/2 tbsp dried or fresh sage finely chopped
  • 180g fresh breadcrumbs
  • 1 large egg lightly beaten

Method

  1. Melt the butter with the oil in a frying pan. Cook the chopped onion and bay leaf with a pinch of salt gently for 15 mins until soft and translucent. Stir in the crushed garlic and chopped sage, frying for 1 min. Allow the mixture to cool for 10 mins.
  2. Preheat your oven to 180C/160C fan/gas 4. Mix the fresh breadcrumbs and lightly beaten egg into the cooled onion mixture. Season well. Form the mixture into 12 balls, weighing them if desired. Place on a parchment-lined baking sheet and bake for 25-30 mins until golden brown. Serve alongside your roast.
