Rosé Syllabub with Sugared Strawberries

Ingredients

  • 125ml rosé wine
  • 50g golden caster sugar
  • finely grated zest and juice 1 lime plus extra lime zest to decorate
  • 284ml carton double cream
  • 700g strawberry
  • 3 tbsp golden caster sugar
  • 1/2 bottle rosé wine (375ml)

Method

  1. To prepare the syllabub base, combine the rosé wine, 50g golden caster sugar, lime zest and juice in a bowl. Place this in the refrigerator to chill for 1 hr.
  2. Roughly 45 mins before you plan to serve, prepare the strawberries. Halve any larger ones, leaving smaller berries whole. Place them in a bowl and sprinkle over 3 tbsp golden caster sugar. Allow them to macerate for 30 mins so their juices develop. Pour the 375ml rosé wine over the strawberries and leave them to stand for 10-15 mins.
  3. Lightly whip the double cream until it just begins to thicken. Slowly add the chilled wine and lime mixture while continuing to beat. Whip until the syllabub is softly set and holds a spoonable shape. Serve the strawberries and their wine-infused juice in bowls, topped with a spoonful of the syllabub. Finish with a scattering of extra lime zest.
