This interactive meal is perfect for a casual dinner, allowing everyone to customise their fajitas to their liking. Sliced rump steak and colourful peppers are quickly fried with a fragrant blend of cumin, coriander, and cayenne. Served with warm tortillas, grated cheddar, fresh coriander, guacamole, and sour cream, it's a lively and adaptable feast for four.

Ingredients

  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • pinch cayenne pepper
  • 2 tbsp vegetable oil
  • 1 onion halved and sliced
  • 3 red peppers cut into strips
  • 300g rump steak sliced
  • small handful fresh coriander leaves
  • 8 tortillas wraps
  • 100g cheddar cheese, grated
  • tubs of guacamole and sour cream

Method

  1. Combine the cumin, coriander, and cayenne with salt and pepper, then set this mixture aside. Warm half of the oil in a frying pan, then add the onion, peppers, and half of the prepared spice mix. Cook these for about 3 mins before transferring the vegetables to a bowl.
  2. Return the pan to the heat with the remaining oil. Fry the sliced steak with the rest of the spice mix for 4 mins until it is cooked through. Move the steak to a different bowl and scatter the fresh coriander leaves over it. Warm the tortilla wraps. Take all the components to the table for everyone to assemble their own fajitas.
