Rocket Salad with Balsamic Dressing and Shaved Parmesan
This classic side salad is a staple in many restaurants and pairs wonderfully with a wide variety of Western dishes. The distinctive peppery flavour of rocket lettuce complements rich, meaty or carbohydrate-heavy main courses such as pasta dishes and roasts perfectly. It comes together with just a few ingredients in mere minutes.
Ingredients
- 150g / 5 oz rocket / arugula ((4 big handfuls))
- 15g / 0.5oz parmesan (, shaved finely using vegetable peeler)
- 1 tbsp balsamic vinegar
- 2 1/2 tbsp extra virgin olive oil
- 1/2 tsp each salt and pepper
Method
- Combine the balsamic vinegar, extra virgin olive oil, salt, and pepper in a jar and shake vigorously to emulsify.
- Add the rocket leaves to a mixing bowl, pour the prepared dressing over them, and toss gently to coat.
- Move the dressed salad to your chosen serving dish and finish by shaving the parmesan cheese over the top using a vegetable peeler. Enjoy straight away.
