Roasted Tomatoes With Shrimp and Feta
This straightforward dish is an excellent way to showcase ripe tomatoes. Tomatoes are roasted with garlic and olive oil before shrimp, fresh parsley and lemon juice are stirred in. It is all topped with crumbled feta cheese and baked until the shrimp are done. The result is a flavourful combination ideal for sharing, ready in about 50 minutes. Serve it warm alongside some crusty bread for a satisfying meal.
Ingredients
- 5 large tomatoes, cut into eighths
- 3 tablespoons olive oil
- 5 cloves garlic, minced
- 3/4 teaspoon kosher salt
- 3/4 teaspoon fresh ground black pepper
- 1 1/2 lbs medium shrimp, peeled and deveined
- 1/2 cup chopped fresh parsley
- 2 tablespoons fresh lemon juice
- 1 cup feta cheese, crumbled
Method
- Heat your oven to 450°.
- Arrange the tomato pieces in a large baking dish. Drizzle with the olive oil and minced garlic, then season with the kosher salt and black pepper. Toss everything to coat.
- Position the dish on the oven's top rack and bake for 20 minutes. Take it out and mix in the shrimp, chopped parsley and lemon juice. Scatter the crumbled feta cheese evenly over the top.
- Return the dish to the oven and continue baking for another 10 to 15 minutes, until the shrimp are fully cooked.
- Enjoy this dish while warm, accompanied by slices of crusty bread.
