This hearty Eastern European dinner features smoked kielbasa and sauerkraut roasted together in a convenient foil packet. Thinly sliced onion, caraway seeds, and olive oil are mixed in before cooking, with chopped green apples added partway through. The foil packet method locks in flavour and makes for very simple cleanup. The dish is finished with a seasoning of salt before serving. It yields four portions and takes 55 minutes from start to finish.

Roasted Sausage and Sauerkraut

Ingredients

  • Reynolds Wrap® Heavy Duty Aluminum Foil
  • 1 (32 ounce) package sauerkraut, drained
  • 2 (13 ounce) packages smoked kielbasa sausage, cut into bite-size pieces
  • 1 medium onion, thinly sliced
  • 1 tablespoon olive oil
  • 1 tablespoon butter, melted
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon caraway seeds
  • 2 green apples, coarsely chopped
  • Salt to taste

Method

  1. Heat your oven to 350 degrees F (175 degrees C).
  2. Cover a baking sheet with a large piece of heavy-duty aluminium foil. Combine the drained sauerkraut, sausage pieces, sliced onion, olive oil, melted butter, 0.5 teaspoon black pepper, and 0.25 teaspoon caraway seeds in the foil's centre, mixing them together. Pull the foil sides up and fold the top and ends over twice to create a sealed packet, ensuring there is some space inside for the heat to move around.
  3. Put the baking sheet with the foil packet into your heated oven and roast the contents for 30 minutes.
  4. Take the packet out of the oven. Use a sharp knife to cut carefully along the top fold to open it, letting the steam out first. Stir the coarsely chopped green apples into the mixture inside. Seal the foil packet again, using an extra piece of foil on top if needed. Place it back in the oven for 10 more minutes.
  5. Remove the packet from the oven, add salt to taste, and then serve the dish.
