Roasted Potatoes With Red Onions
This recipe creates a delicious side dish of crispy roasted potatoes combined with chunks of red onion, whole garlic cloves and fresh rosemary. The potatoes are roasted in a hot oven with butter and olive oil until golden and tender. The method ensures the potatoes stay crisp, and seasoning is added at the perfect moment. It's a straightforward, flavourful accompaniment ready in about 35 minutes.
Ingredients
- 1 1/2 lbs potatoes, small and firm
- 2 tablespoons butter
- 2 tablespoons olive oil
- 2 red onions, cut into chunks
- 8 cloves garlic, unpeeled
- 2 tablespoons fresh rosemary, chopped
- salt, to taste
- black pepper, to taste
Method
- Set your oven to 450°F. Peel the potatoes, quarter them, and give them a rinse under water.
- It is important to dry the potatoes thoroughly so they become crisp during cooking.
- Put the butter and olive oil into a roasting pan and warm it in the oven.
- Once the butter has melted and is foaming, add in the potato quarters, red onion chunks, unpeeled garlic cloves and chopped rosemary.
- Toss everything to coat well, then arrange the contents in one even layer.
- Roast the pan in the oven for about 25 minutes, until the potatoes are golden and a fork pierces them easily.
- Occasionally shake the pan to move the potatoes around as they cook.
- After the potatoes are cooked, season them with salt and black pepper to your taste.
- A tip: add the salt just a few minutes before the end of cooking to help the potatoes keep their shape.
- Serve the dish while hot.
