Roasted Pepper and Halloumi Wraps
These speedy wraps are perfect for a fast meal. Golden fried halloumi is combined with jarred roasted red peppers and aubergine slices, along with Kalamata olives and fresh parsley. Everything is wrapped in warm flatbreads with a squeeze of lemon for a bright, flavourful finish. This dish is ideal for a simple lunch, supper or snack.
Ingredients
- 2 thick slices halloumi cheese
- 1/2 tsp dried oregano
- 1 tbsp olive oil
- 2 Arab flat bread (they look like circular pitta bread)
- 2 roasted red peppers from a jar
- 6 slices roasted aubergines from a jar
- handful of Kalamata olives
- 4 lemon wedges
- good handful flat leaf parsley sprigs
Method
- Coat the halloumi slices on both sides with the dried oregano. Warm the olive oil in a non-stick frying pan and fry the halloumi until golden on each side. While the cheese cooks, warm the flat breads for a few seconds per side over a gas flame or in a large frying pan.
- Cut the roasted peppers in half, discarding any seeds, and slice them thickly. Place them in the pan with the aubergine slices and olives to heat. Squeeze the juice from two lemon wedges over the mixture and season. To assemble, share the filling and parsley sprigs between the wraps, finishing each with a remaining lemon wedge.
